188. What are your food preferences and how did they come about?
There is not doubt that if given the chance, my preference for food would be good old fashion comfort food. For me, comfort food is all of the food that I grew up on. We usually ate rather simple (and cheap) when I was growing up. We always had plenty of food to eat, but we definitely didn’t eat “fancy” by any means. As my brother and I started getting older, we would always have friends over and they would usually end up staying and eating with us, so my parents would make food that could feed a lot of people, for a little amount of money.
I’m sure some of what I consider comfort food, most people would probably not find very appetizing. Although I eat completely different now that we are eating low-carb/lazy keto, there are still many comfort foods that I crave and wish I could still eat. I have a surgery coming up in a few weeks. My mother has already said that she would be more then happy to cook for us a few nights if there was anything special I wanted. I think I may just sneak some of these comfort foods into my recovery.
1.) Hamburger Hash
We had this all the time when I was growing up. Super simple. Just browned ground beef mixed with fried diced potatoes. Although my mom would always use fresh potatoes, I was much more of a lazy cook as I got older and would just used the frozen diced potatoes when I would make this for myself.
2.) Spaghetti. I used to eat spaghetti at least once a week. Now that I am not eating pasta (and the pasta sauce usually has to many carbs as well), I cannot even remember the last time I had a nice big bowl of spaghetti. My mom used to make this all the time when we were little. Pretty much everything we ate was quick, simple and cheap. This falls into all of these categories.
3.) OK.. this one is going to trigger the “gross” reflex in some.. but for me Hamburger Helper is peer comfort food. Yes, another thing we used to eat weekly when I was growing up. My favorite is the beef pasta.
4.) Something I very much miss now that we are on low-carb eating is what my family used to call “Spanish Rice”. It’s not really Spanish rice in the traditional sense. It is actually just browned ground beef, then you add tomato sauce, water and instant rice. Cover and cook until the rice is soft and absorbs most of the tomato sauce/water. Oh my goodness.. this is making me so hungry.
5.) Tacos. Both my mom and dad make the best tacos. They fry the corn tortillas first, which makes the tacos extra good. Disclaimer: I just ate these a few weekends ago. After I found out about my upcoming surgery, I needed some comfort food, because I am stress eater. Didn’t really stick low-carb/keto that day, but I must say, it was WELL worth it.
6.) Chili Cheese fries from Wienerschnitzel. What can I say. These are just my indulgent treat. I usually only allow myself to have them about once a year, but when I do eat them, I enjoy every last bit! I think what draws me to these in particular is that Wienerschnitzel uses real cheese and not the runny nacho cheese (which I do not like at all).
Something I just learned about myself…. never write about food when you are hungry. 🙂 I now want to run home and make all of these items, or worse, stop at Wienerschnitzel and get some chili cheese fries on the way home! I won’t of course, but I sure want to.
